Responsible for performing various tasks in livestock harvest. Able to perform production functions in an efficient and quality manner. Responsible for the condition and process flow of the harvest floor, following USDA regulatory standards, accuracy, and quality and custom processing of; beef, chicken, duck, quail, pork, goat, as well as the cut, packaging, and weighing of meat. We are committed to providing quality and humane harvesting services.

Job Duties:
A Butcher typically has a wide range of responsibilities, which can include:
- Willing to work individually as well as in a team
- Maintain a safe environment- Personal Safety and Food Safety
- Basic knowledge of math, weights, and measures
- Manufacturing experience is helpful, but not necessary
- Desire and ability to follow general food safety practices
- Meat cutting, trimming, grinding, packing, and wrapping
- Operate and maintain butchering equipment such as knives, saws, grinders, and slicers
- Manage flow of product through processing
- Move supplies/product to freezer or shipping
- Cleaning and sanitizing worksite, equipment, and work areas
- Assist with harvest of livestock as needed
- Day to day operational procedures to ensure stock level, inventory, and cleanliness
Requirements:
- 3 plus years of proven experience as a butcher or meat cutter in a livestock harvest or meat processing environment. (Experience with multi-species processing and slaughter operations is highly preferred.)
- In-depth knowledge of USDA regulations and food safety standards related to meat processing and slaughter. Ability to consistently apply HACCP principles, sanitation standards, and inspection readiness in daily work.
- Skilled in using butchery tools (knives, saws, grinders) and operating meat processing equipment safely and effectively.
- Must have the ability to identify different meat cuts
- Ability to utilize knives, saws, and other equipment to perform meat cutting and trimming
- Must be able to breakdown carcasses such as stunning, bleeding, skinning, or scalding, eviscerating, and washing carcasses
- Proficiency in humane animal handling and slaughter techniques.
- Keen attention to detail to ensure accuracy in cuts, weights, labeling, and order fulfillment. Commitment to producing high-quality products and maintaining consistency in appearance and taste.
